Aug. 25th, 2010 08:17 pmI made chicken enchiladas tonight, halving the recipe since it's just li'l ol' me here, and much as I like enchiladas, I can't eat ten of them before they start to go bad. So it all went well, until I noticed that I seemed to have a lot of filling. Like, so much that my tortillas couldn't be rolled up all the way. I sort of shrugged it off, though, and didn't think too much of it until I took the pan out of the oven. It was then that I noticed that the enchiladas were swimming in melted cheese, with a dash of the green sauce I'd made for them. I double-checked the recipe. I'd halved everything except for the cheese. Oops.
Thankfully, they still taste delicious, although I suspect that I'm getting far more than my daily requirement of cheddar.
